Actually, it's considered bad luck for sailors to know how to swim. The whole, expecting your ship to sink thing. So chances are they not only don't know how to swim, they won't willingly go in the water if they have a chance. Part of why walking the plank was so bad.

So they're just boned. Poor Pirates, they just stole it from someone else, anyway...

While that may have been part of it... there's also the fact that if you fell out of a moving ship, you'll probably die of exhaustion and drown before they can manage to get the ship turned around and back in time to save you, thus making it more humane to NOT know how to swim so they don't suffer like that... Stupid momentum messing everything up for people who go overboard...
